Good Eats: Weekly Meal Plan {3/25/18}

The Plan

Each Sunday, I’ll use Playdates and Prosecco to record our dinner plans for the week, including anything made during Sunday prep. I’ll link any relevant recipes and include some of my favorite products/staples in case you want to use ’em!

Yep, coming to you Monday because we’ve been crazy busy. This is a short week for us; we’re traveling to see family this weekend for Easter. Spending Easter weekend in the Woodlands has been a tradition since we moved to Texas in 2014 and I wouldn’t have it any other way! Between the short week and our recent induction into the exclusive club that is Costco, I mainly had to meal plan with things we already had around the house.

Here’s what we’re working with this week:

The Meals

Prep

Big Salad Bowl: Not much prep going on this week. I’ve got a bowl of romaine washed and chopped in the fridge, ready for salads. We’ve got tons of leftovers from last week and the weekend, so we’re really trying to clean things out for a fresh start after the weekend!

Entrees

This week we’re having:

  • Pulled Pork Street Tacos (same pork recipe from last week) with avocado/jalapeno/cilantro slaw + quinoa and brown rice blend. {For the slaw, I used this recipe, but adapted it by blending the liquid mixture with half an avocado and about 2 tablespoons of cilantro. I’ll use the other half of the avocado and the cilantro for topping the tacos when we put them together. The quinoa and brown rice blend is from our new bestie, Costco.}
  • Buffalo Cauliflower + side cobb salad (homemade) {the ones I’m making use bread crumbs, but if you’re gluten-free, try this recipe!}

  • Jalapeno and Pepperjack Burgers + homemade baked sweet potato fries
  • Leftovers to clean out the fridge for the long weekend!
