Good Eats: Weekly Meal Plan {3/4/18}

To be clear, when I say “meal plan”, I use the term quite loosely. Our weekly meal plans consist of dinners and whatever else needs prepped on Sundays. Breakfasts are usually pretty basic (eggs with bacon or turkey sausage, a granola bar, or just coffee) and lunch is a salad, leftovers from the night before, or whatever scraps are left from the little’s lunches. I’ll have to get better about that, but I’m pretty sure I’m not alone!

The Plan

Each Sunday, I’ll use Playdates and Prosecco to record our dinner plans for the week, including anything made during Sunday prep. This week, Sunday prep includes fresh bread and banana/chocolate/oat bites (because #carbsarelife) and a big bowl of salad.

The Meals

Prep

Fresh Bread: If you’ve ever made fresh bread, you know that there’s no comparison to store-bought. I haven’t found a recipe that I LOVE yet, but I have tried a few pretty good ones. When I find a real winner, I’ll share it with y’all, but know this: I do it the EASY WAY. That means minimal kneading and minimal rise-time, because ain’t nobody got time for all that!

Banana/Chocolate/Oat Balls: I’ll write up the recipe for these later this week and update, but these little oat balls are PERFECT for popping in the fridge or freezer in the beginning of the week and grabbing quickly later. Great for breakfast, on-the-go, or for dessert.

Salad: One of the biggest game-changers is keeping a big bowl of salad in the fridge. Yes, you could just buy a big tub of pre-prepped salad mix, but making your own is so much cheaper! I buy a big head of romaine to wash and chop (you can also mix half-romaine and half-baby spinach) in the beginning of the week. To make things even easier, you can prep toppings, too. Grilled chicken, bacon, and veggies all store well for quick and easy lunches or dinner side salads.

I know that one night we’ll eat leftovers, and one night we’ll eat out, so that’s it! I don’t ever stick to certain days, I just go by what we feel like eating that day and how much time each meal takes to prepare since our schedules are so busy. I’ve linked recipes I plan to follow or at least use as a guide, so feel free to steal ’em!
